Crème brûlée with Jardin sous la lune green tea


Jardin sous la lune, green tea, from our range of Militant Teas, with its spicy tulsi flavours, underscored by delicious notes of mandarin and cardamom, was the inspiration for this light and tasty recipe. Created in collaboration with Vanessa from the  Deliacious vegan cookery and baking blog and Esprit Veggie Magazine.  It is a great alternative to traditional crème brûlée (but can easily be adapted to the original recipe) and showcases all the delicious flavours of this tea with its lemony, slightly peppery accents.

To be served, depending on your taste and imagination, with all types of tea or rooibos.

Recipe for crème brûlée with Jardin sous la lune green tea

Preparation time: 10 minutes

Cooking time: 1 hour for a traditional-style crème brûlée or allow to chill in the fridge until set.

Ingredients for 4 crèmes brûlées:

Method:

In a mixer or with a hand mixer, mix the silky tofu with the cream, sugar, cornflour, salt and agar-agar. Heat the milk, add the tea and allow to infuse for 4 minutes, then strain to remove the tea leaves. Mix together the milk and tofu mixture. Thicken everything over low heat in a saucepan, stirring with a spatula and not a whisk (so as not to incorporate any air). Once the mixture has thickened a little (it should have a syrupy texture so the mixture coats spatula!), pour into the crème brûlée ramekins.

For the texture of a true crème brûlée, bake in the oven at 100° C for an hour or place the ramekins in the fridge, to allow the agar-agar firm up the mixture very slightly. (Take care to use the correct amount to ensure a smooth cream!)

Just before serving, bring to room temperature, sprinkle a layer of sugar on top then burn with a blowtorch to create a crunchy caramel (or put them under a grill for about 1 minute).
