Almond biscuits with a spicy chocolate soufflé filling


Every year, we promise ourselves we will watch what we eat over the holidays and while we start out with the best intentions, every year we know in advance that we will succumb to the sweet sin of gluttony… So what do you say to trying some delicious  homemade treats made with good ingredients? For our part, we can almost follow this recipe from our commercial advisor Sophie with our eyes closed! Almond biscuits with a chocolate soufflé filling and Terra Madre spices: just hearing the name and seeing the lovely pictures make our mouths water…

biscuit aux amandes

 

Ingredients:

For the dough:
200g of flour
75g of softened butter
50g of almond paste
70g of icing sugar
2 egg yolks
1 pinch of salt

For the filling:
1 egg white
50g of icing sugar
20g of grated chocolate
30g ground almonds
2 teaspoons of Christmas Spices Terra Madre

Preparation:

For the dough:
Mix the sifted flour with the salt and icing sugar
Add the egg yolks, softened butter and almond paste
Mix the dough by hand (dampen with a little milk if necessary)
Shape into a ball and leave to rest in the fridge

Heat the oven to 210°C.
Roll out the dough to a thickness of 3mm. Cut out individual biscuits and put on a tray lined with greaseproof paper

For the filling:
Beat the egg white until stiff
Fold in the icing sugar, grated chocolate, ground almonds and spices
Put the mixture into an icing bag and pipe into the centre of the biscuits

Bake for 12 to 15 minutes. Leave to cool.

For the perfect accompaniment, for tea with friends these delicious biscuits go well with a Kukicha sud-coréen (South-Korean Kukicha). For tea with the children, try Honeybush, which is caffeine-free and naturally sweet.
